Cheddar Pecan Muffins
These muffins make an ideal breakfast project for kids and are also great for lunch, served with a green salad or a fruit salad.

Ingredients
- 2 cups biscuit mix
- 1 cup shredded sharp Cheddar cheese
- 1/2 cup chopped pecans
- 1/2 teaspoon dry mustard
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon cayenne pepper
- 1 cup milk
- 1 large egg
Directions
Preheat oven to 400°F. Grease 24 muffin cups.
Combine biscuit mix, Cheddar, pecans, dry mustard and cayenne pepper in a large bowl and mix well.
Combine milk and egg in a small bowl and mix well.
Add milk mixture to biscuit mix mixture. Stir just until moistened.
Fill prepared muffin cups two-thirds full with batter. Bake until golden, about 12 minutes. Serve immediately.
Secret Tip
Try using the muffin batter as a quick, flavorful topping for chicken potpie. Drop by tablespoonfuls all over the potpie filling, then bake until the biscuits are golden at the edges and cooked through, about 10 to 15 minutes.
