Corn & Cheese Muffins
Corn, fresh basil and cheese give these muffins a ?trio of marvelous flavors.

Ingredients
- 1/3 cup milk
- 1 large egg
- 1 (8 1/2-ounce) package corn muffin mix
- 1/3 cup shredded Cheddar cheese
- 1/3 cup frozen corn, thawed
- 3 tablespoons chopped fresh basil
Directions
Preheat oven to 400°F. Grease 8 muffin cups.
Combine milk and egg in a small bowl and mix well.
Combine corn muffin mix, Cheddar, corn and basil in a large bowl and mix well.
Add milk mixture to corn mixture and stir just until moistened.
Divide batter evenly among the prepared muffin cups. Bake until golden, about 13 to 15 minutes. Serve immediately.
Secret Tip
When baking muffins, fill any unused muffin cups one-half full with water. The additional moisture will help ensure that your muffins will not burn.
