Date Nut Muffins
Dates are so naturally sweet that adding them to muffins is like adding candy, except that dates are fat-free, cholesterol-free, sodium-free and full of fiber.

Ingredients
- 2/3 cup dates, chopped
- 1/2 cup boiling water
- 1/2 cup sugar
- 4 tablespoons butter, softened
- 1 large egg
- 1 cup all-purpose flour
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped pecans
Directions
Preheat oven to 350°F. Spray 9 muffin cups with nonstick cooking spray.
Combine dates and boiling water in a small bowl. Let stand to cool; drain.
Combine sugar, butter and egg in a large bowl. Beat with an electric mixer until light and fluffy.
Combine flour, baking powder and salt in a small bowl and mix well.
Add flour mixture and dates alternately to butter mixture, mixing well after each addition. Fold in pecans.
Fill prepared muffin cups half full with batter. Bake until golden, about 15 minutes. Transfer to wire racks to cool.
Secret Tip
If you can find dried, floured date bits, use those. They don't need to be plumped with boiling water, so you'll save a little time and effort.
