Miniature Popovers

There’s nothing like a little kitchen magic to lift your spirits. The sight of puffy popovers billowing up is sure to help you fall in love with baking again.

Servings: makes 21/2 dozen popovers

Ingredients

  • 2 cups milk
  • 1 3/4 cups all-purpose flour
  • 3 tablespoons butter, melted, divided
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup honey

Directions

  1. Preheat oven to 450°F. Grease 30 miniature muffin cups.

  2. Combine milk, flour, 11/2 tablespoons butter, cinnamon and salt in a large bowl and mix just until smooth. Beat in eggs one at a time. Do not overbeat; batter should be consistency of whipping cream.

  3. Fill muffin cups three-fourths full with batter. Bake for 7 minutes. Reduce oven temperature to 350°F. Bake popovers until golden, about 8 to 10 minutes.

  4. Combine honey and remaining butter in a small bowl and mix well. Drizzle over hot popovers. Serve immediately.

Secret Tip

Get everyone ready and seated at the table so you can bring the popovers straight from the oven when they're at their ­tender, warm best. They're still delicious when they cool, but there's really nothing like a puffy, hot popover.
