Parmesan Biscuit Muffins

Ingredients
- 2 cups biscuit mix
- 6 tablespoons grated Parmesan cheese, divided
- 1 tablespoon sugar
- 1 teaspoon dried dill
- 1 tablespoon grated lemon zest
- 1/2 cup milk
- 1/2 cup milk
- 1/4 cup white wine or 3 tablespoons chicken broth and 1 tablespoon white-wine vinegar
- 4 tablespoons butter, melted
- 1 large egg, beaten
Directions
Preheat oven to 400°F. Spray 12 muffin cups with nonstick oil and flour cooking spray.
Combine biscuit mix, 1/4 cup Parmesan, sugar, dill and lemon zest in a large bowl and mix well.
Add milk, wine, butter and egg to biscuit mix mixture and stir just until moistened.
Fill prepared muffin cups two-thirds full. Sprinkle with remaining Parmesan. Bake until lightly golden, about 12 minutes.
Secret Tip
To avoid overmixing the muffins, combine the milk, wine, butter and egg thoroughly before adding them to the biscuit mix. If you use a glass measuring cup to microwave the butter, you can measure all the ingredients in the cup and save yourself washing a bowl.
