Peanut Butter & Jelly Muffins
The old standby, peanut butter and jelly, gets a makeover here in a novelty muffin that everyone will want to try.

Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup chunky peanut butter
- 1/4 cup vegetable oil
- 1/4 cup vegetable oil
- 1 large egg, beaten
- 1 1/4 cups milk
- 2 tablespoons strawberry jelly
Directions
Preheat oven to 425°F. Spray 12 muffin cups with nonstick cooking spray.
Combine flour, sugar, baking powder and salt in a large bowl and mix well.
Combine peanut butter, vegetable oil and egg in a medium bowl. Whisk until well blended. Add milk gradually, whisking continually.
Add peanut butter mixture to flour mixture and stir just until moistened.
Fill prepared muffin cups one-half full with batter. Spoon 1/2 teaspoon strawberry jelly on top of each. Top with remaining batter.
Bake until golden, about 12 minutes. Transfer to a wire rack to cool.
Secret Tip
Be sure to cover the jelly completely when spooning batter over it. Any jelly that's not covered will bubble up and over the muffin cup, making for a tough cleanup job.
