Peanut Butter & Jelly Muffins

Peanut Butter & Jelly Muffins

The old standby, peanut butter and jelly, gets a makeover here in a novelty muffin that everyone will want to try.

Servings: makes 1 dozen muffins
Prep Time: 20 minutes start to finish
Cooking Time: 45 minutes

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chunky peanut butter
  • 1/4 cup vegetable oil
  • 1/4 cup vegetable oil
  • 1 large egg, beaten
  • 1 1/4 cups milk
  • 2 tablespoons strawberry jelly

Directions

  1. Preheat oven to 425°F. Spray 12 muffin cups with nonstick cooking spray.

  2. Combine flour, sugar, baking powder and salt in a large bowl and mix well.

  3. Combine peanut butter, vegetable oil and egg in a medium bowl. Whisk until well blended. Add milk gradually, whisking continually.

  4. Add peanut butter mixture to flour mixture and stir just until moistened.

  5. Fill prepared muffin cups one-half full with batter. Spoon 1/2 teaspoon strawberry jelly on top of each. Top with remaining batter.

  6. Bake until golden, about 12 minutes. Transfer to a wire rack to cool.

Secret Tip

Be sure to cover the jelly completely when spooning ­batter over it. Any jelly that's not covered will bubble up and over the muffin cup, making for a tough cleanup job.
