Spiced Pumpkin Muffins
Pumpkin muffins are wholesome for an after-school snack and just right with tea or coffee.

Ingredients
- 1 1/2 cups self-rising flour
- 1/2 teaspoon salt
- 1/2 teaspoon pumpkin pie spice
- 1/2 cup firmly packed brown sugar
- 1 large egg
- 1/2 cup canned pumpkin puree
- 1/2 cup canned pumpkin puree
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 teaspoons cinnamon sugar
Directions
Preheat oven to 375°F. Grease 12 muffin cups.
Sift flour, salt and pumpkin pie spice into a medium-size mixing bowl. Stir in the brown sugar. Mix egg, pumpkin, milk and oil in a medium bowl. Add to the dry ingredients and mix just until blended.
Fill prepared muffin cups three-fourths full. Sprinkle muffins with cinnamon sugar.
Bake until a toothpick inserted in centers of muffins comes out clean, about 17 minutes.
Secret Tip
Miniature muffins bake more quickly than full-size muffins, as do those baked in special shallow pans made to maximize the crusty top portion of the muffin. Each bakes in about 12 minutes. Let stand 2 minutes before removing from the pan so muffins don't tear.
