Chocolate Cheesecakes
Making individual cheesecakes means dessert bakes up in a fraction of the time.

Ingredients
- 1/2 cup semisweet chocolate chips
- 11 ounces cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/2 cup milk
- 1/2 cup milk
- 2 large eggs
- 2 (6-count) packages miniature graham cracker crusts
Directions
Preheat oven to 325°F.
Place chocolate chips in a small microwave-safe bowl. Microwave on MEDIUM, stirring occasionally, until melted, about 11/2 minutes. Let stand to cool.
Meanwhile, place cream cheese in a large bowl. Beat with an electric mixer set at medium speed until smooth. Beat in sugar and vanilla. Add milk and eggs and beat just until blended.
Stir melted chocolate into cream cheese mixture. Spoon equal portions of mixture into each graham cracker crust.
Bake just until set, about 15 minutes. Let stand to cool. Store in refrigerator.
Secret Tip
If you prefer to bake a single large cheesecake, simply pour the filling into a full-size prepared chocolate crumb crust. Bake at 325ºF for 1 hour. To prevent cracks in the surface, place a pan of water on the bottom shelf of the oven.
