Four-Chocolate Cupcakes

Ingredients
- 1 cup all-purpose flour
- 3 tablespoons unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 cup (2 sticks) butter
- 2 (1-ounce) squares unsweetened chocolate
- 2 (1-ounce) squares semisweet chocolate
- 1 1/2 cups granulated sugar
- 1 1/2 cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs, beaten
- 12 ounces semisweet chocolate chips
- Confectioners' sugar
Directions
Preheat oven to 350°F. Line muffin cups with foil liners.
Combine flour, cocoa and salt in a large bowl and mix well.
Combine butter, unsweetened chocolate squares and semisweet chocolate squares in a medium saucepan. Cook over medium heat, stirring continually, until melted, about 4 minutes. Remove from heat.
Beat in granulated sugar using an electric mixer. Beat in vanilla, then eggs. Beat for 1 minute.
Add chocolate mixture to flour mixture and mix well. Stir in chocolate chips.
Fill prepared muffin cups two-thirds full with batter. Bake until a toothpick inserted in centers of cupcakes comes out clean, about 12 minutes. Transfer to a wire rack. Dust with confectioners' sugar.
Secret Tip
These cupcakes are wonderful for birthday parties. Simply remove the paper liners and frost. To keep the candle upright and secure, embed a clear, round candy with a hole in the center in the frosting, and place the birthday candle in the hole.
