Almond Crescents

These cookies are simple to make and keep well for days-if they last that long!

Servings: makes 3 dozen cookies
Prep Time: 29 minutes start to finish

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 2/3 cup ground almonds
  • 1/3 cup granulated sugar
  • 1 2/3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon salt
  • 1 cup confectioners' sugar
  • 1 teaspoon cinnamon

Directions

  1. Preheat oven to 325°F.

  2. Beat the butter, almonds and granulated sugar together in a mixing bowl. Sift the flour and salt together. Beat into the butter mixture gradually. Chill, covered, in the freezer for 5 minutes.

  3. Roll chilled dough 1/8 inch thick on a floured surface. Cut into 36 squares. Shape into crescents. Arrange on a baking sheet.

  4. Bake until set, about 14 to 16 minutes; do not brown. Let stand until slightly cooled.

  5. Combine confectioners' sugar and cinnamon in a bowl and mix well. Roll the cookies carefully in confectioners' sugar mixture. Arrange on a wire rack to cool.
