Butterscotch Potato Chippers
These cookies may sound crazy, but if you love the combination of sweet, salty and crunchy, this recipe will fire your imagination. Try it!

Ingredients
- 1 cup (2 sticks) butter, softened
- 1 cup firmly packed light brown sugar
- 2 large eggs, beaten
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 2 cups crushed potato chips
- 1 (11-ounce) package butterscotch chips
- 1 cup chopped pecans
Directions
Preheat oven to 325°F. Grease baking sheets.
Combine butter, brown sugar and eggs in a large bowl. Beat with an electric mixer until smooth and creamy.
Combine flour and baking soda in a small bowl and mix well. Add to butter mixture gradually, mixing well after each addition. Fold in potato chips, butterscotch chips and pecans.
Drop by teaspoonfuls onto prepared baking sheets and press lightly. Bake until edges are lightly browned, about 10 to 12 minutes. Cool on baking sheets for 2 minutes. Transfer to wire racks to cool completely.
Secret Tip
Notice the direction to flatten each cookie before baking. These cookies do not flatten or spread by themselves. If dropped in lumps, they'll bake in lumps. Flattening gives them a more attractive appearance and makes them easier to store.
