Chocolate Chippers

Using biscuit mix saves having to measure flour and ?leavening and yields a tender, cake-like cookie.

Servings: makes 5 dozen cookies

Ingredients

  • 1/2 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 8 tablespoons (1 stick) butter, softened
  • 1 large egg
  • 2 cups biscuit mix
  • 2 cups biscuit mix
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped macadamia nuts

Directions

  1. Preheat oven to 350°F. Grease baking sheets.

  2. Combine brown sugar, granulated sugar and butter in a large bowl. Beat with an electric mixer until smooth and creamy.

  3. Add egg to brown sugar mixture and beat well. Beat in biscuit mix. Fold in chocolate chips and macadamia nuts.

  4. Drop dough by teaspoonfuls onto prepared baking sheets. Bake until lightly browned, about 10 minutes. Let stand to cool on baking sheets for 3 to 4 minutes. Transfer to wire racks to cool completely.

Secret Tip

When baking more than one sheet of cookies at a time, you may find that the cookies in the upper part of the oven bake more quickly than those in the lower part. For even baking, swap the sheets halfway through the cooking time, moving the cookies from the upper rack to the lower one and vice versa.
