Chocolate Coffee Bites

Want a bit of something sweet but don’t want to turn on the oven? Chocolate Coffee Bites are part cookie, part confection and all chocolate indulgence.

Servings: makes 5 dozen cookies

Ingredients

  • 1 (9-ounce) package chocolate wafers, crushed
  • 1 cup ground almonds
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup sugar, divided
  • 2 tablespoons instant coffee granules
  • 1/3 cup coffee-flavored liqueur
  • 1/2 cup light corn syrup
  • 2 teaspoons cinnamon

Directions

  1. Combine chocolate wafer crumbs, almonds, cocoa powder and 1/4 cup sugar in a large bowl and mix well.

  2. Dissolve coffee in coffee liqueur in a small bowl. Add coffee mixture and corn syrup to chocolate wafer crumb mixture and mix well.

  3. Shape the mixture into 1/4-inch balls.

  4. Combine remaining sugar and cinnamon in a shallow dish. Coat balls with cinnamon sugar. Arrange on a waxed paper- covered baking sheet. Chill, covered, until serving time.

Secret Tip

Ground almonds stand in for flour and help the cookies hold their shape while adding a mild nut flavor. If you prefer a more intense nut flavor, try using 1 cup minced pecans or English walnuts.
