Coconut Nibbles
This recipe is quite similar to one that was very popular in the 1950s, called cornflake cookies.

Ingredients
- 2 cups wheat flake cereal
- 1 cup shredded unsweetened coconut
- 2 egg whites
- 1 cup sugar
Directions
Preheat oven to 350°F. Grease a baking sheet.
Combine cereal and coconut in a small bowl and mix well.
Place egg whites in a medium bowl. Beat with an electric mixer set at high speed until soft peaks form, adding sugar gradually.
Combine egg whites and cereal mixture in a large bowl and mix well.
Drop by tablespoonfuls 2 inches apart onto prepared baking sheet. Bake until golden, about 8 to 9 minutes.
