Double Chocolate Cookies

Using boxed cake mix saves all the measuring-and the mess-associated with making cookies.

Servings: makes 4 dozen cookies

Ingredients

  • 1 (18.25-ounce) package chocolate cake mix
  • 1/2 cup (1 stick) butter, softened
  • 2 large eggs
  • 1 cup miniature candy-coated chocolate candies
  • 1 cup miniature candy-coated chocolate candies
  • 1/2 cup chopped almonds

Directions

  1. Preheat oven to 350ºF. Grease baking sheets.

  2. Combine cake mix, butter and eggs in a large bowl. Beat with an electric mixer set at medium speed until blended.

  3. Stir in the chocolate candies and almonds. Drop batter by teaspoonfuls onto prepared baking sheets.

  4. Bake cookies until lightly browned, about 10 minutes. Cool on baking sheets for 2 minutes. Transfer cookies to wire racks to cool completely.

Secret Tip

To prevent cookies from crumbling or tearing as they are being removed from the baking sheets, let them cool on the ­baking sheets for a full 2 minutes. Remove to wire cooling racks and let them cool completely before storing.
