Molasses Cookies
This cookie has everything an old-fashioned cookie should ?have-soft texture and a deep, dark molasses flavor.

Ingredients
- 1/2 cup applesauce
- 1 1/4 cups sugar, divided
- 6 tablespoons butter, softened
- 1/4 cup molasses
- 1 large egg
- 1 cup all-purpose flour
- 1 cup wheat flour
- 1 cup wheat flour
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon salt
Directions
Preheat oven to 375°F. Spray baking sheets with nonstick cooking spray.
Spoon the applesauce into a coffee filter in a colander. Let stand for 5 minutes to drain. Spoon into a large bowl.
Add 1 cup sugar and butter. Beat with an electric mixer set at medium speed until well blended, about 3 minutes. Beat in molasses and egg.
Combine all-purpose flour, wheat flour, baking soda, cinnamon, cloves and salt in a bowl and mix well. Add gradually to applesauce mixture, beating continually. Freeze for 5 minutes.
Shape the dough into 1-inch balls. Roll in remaining sugar. Arrange on prepared baking sheets. Bake until browned, about 8 to 10 minutes. Cool on baking sheets for 5 minutes. Transfer to wire racks to cool completely.
Secret Tip
Out of molasses? You can use any number of ingredients to substitute. Dark or light corn syrup, honey, maple syrup, liquid brown sugar or maple syrup will all work. The result will be a slightly different taste and texture but still a good cookie in a hurry.
