Peanut Butter Cookies

Peanut Butter Cookies

Everyone knows those distinctive fork marks on the tops of these treats: They mean real homemade peanut butter cookies.

Servings: makes 3 dozen cookies

Ingredients

  • 1 cup chunky peanut butter
  • 1 cup vegetable shortening
  • 1 cup granulated sugar
  • 1 cup firmly packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 375°F.

  2. Combine peanut butter, shortening, granulated sugar, brown sugar, eggs and vanilla extract in a medium bowl. Beat with an electric mixer set at medium speed until smooth and creamy.

  3. Combine flour and salt in a small bowl; mix well. Add flour mixture gradually to peanut butter mixture, mixing continually.

  4. Drop by 11/2 teaspoonfuls onto baking sheets. Flatten in a crisscross pattern with a fork dipped in granulated sugar.

  5. Bake cookies until golden, 8 to 10 minutes. Cool on baking sheets for 2 minutes. Transfer to wire racks to cool completely.

Secret Tip

Adding a little whole-wheat flour to the dough gives these cookies a healthful boost. Simply substitute 1/2 cup whole-wheat flour for 1/2 cup of the all-purpose flour.
