Soft Brownie Bites

Everyone wants a chocolate snack, and they want it now! This tender chocolate cookie is a snap to make and ready to eat in 24 minutes.

Servings: makes 3 dozen cookies
Prep Time: 24 minutes start to finish
Cooking Time: 45 minutes

Ingredients

  • 2 cups milk chocolate chips, divided
  • 4 tablespoons butter
  • 1 (14-ounce) can sweetened condensed milk
  • 2 cups plus 2 tablespoons biscuit mix
  • 2 cups plus 2 tablespoons biscuit mix
  • 1 large egg

Directions

  1. Preheat oven to 350°F. Line miniature muffin cups with paper liners.

  2. Combine 1/2 cup chocolate chips and the butter in a large saucepan. Cook over low heat, stirring continually, until chocolate chips are melted. Remove from heat.

  3. Add sweetened condensed milk to chocolate mixture and stir until blended. Stir in biscuit mix, egg and remaining chocolate chips.

  4. Fill muffin cups three-fourths full with batter.

  5. Bake just until centers are set, about 10 to 12 minutes. Do not overbake; cookies should be soft.

Secret Tip

When these are ready to remove from the oven, the outside will barely look done, perhaps just set. Don't worry-this is when they're ready. The cookies continue to bake for 2 minutes after they're removed from the oven. You definitely don't want to overbake them and lose that wonderful texture.
