Stir & Drop Sugar Cookies
These are so quick to whip up-you don’t even need the electric mixer, just a spatula. Cleanup is easy, too.

Ingredients
- 2 cups sifted all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 2/3 cup vegetable oil
- 2 eggs
- 2 teaspoons vanilla extract
- 1 teaspoon grated lemon zest
- Tinted sugar
Directions
Preheat oven to 400°F.
Combine flour and salt in a medium bowl and mix well.
Combine granulated sugar, vegetable oil, eggs, vanilla and lemon zest in a large bowl and mix well. Stir in flour mixture.
Drop dough by teaspoonfuls 2 inches apart
onto baking sheets. Flatten with greased fingers. Sprinkle with tinted sugar. Bake until edges are lightly browned, about 8 minutes.
Secret Tip
It's tempting to make monster cookies by scooping up big chunks of dough. You'll find, though, that more cookies will fit on a baking sheet and will bake in far less time if you stick with a portion about 2 inches across.
