Apple Quesadillas
Apple Quesadillas are just a quick version of apple turnovers ?made with tortillas instead of pastry.

Ingredients
- 2 large Granny Smith apples, thinly sliced
- 1 tablespoon cinnamon sugar
- 1 teaspoon lemon juice
- 7 tablespoons butter, divided
- 6 (6-inch) flour tortillas
- 6 (6-inch) flour tortillas
- 6 scoops vanilla ice cream
- 1/2 cup caramel topping
Directions
Combine apples, cinnamon sugar and lemon juice in a medium bowl and toss to coat.
Melt 1 tablespoon butter in a medium saucepan over medium heat. Sauté apple mixture in hot butter, stirring continually, until apples are tender, about 5 minutes. Remove from the heat.
Spoon equal portions of apple mixture onto each tortilla. Fold tortillas in half to enclose filling.
Melt 1 tablespoon butter in a large skillet over medium heat. Cook 1 quesadilla in the hot butter, turning once, until golden, about 2 minutes per side. Remove to a dessert plate. Repeat with the remaining butter and quesadillas.
Top each serving with a scoop of vanilla ice cream. Drizzle with caramel topping. Serve immediately.
Secret Tip
For a dessert that's done even more quickly, use a can of apple pie filling in place of the apples, cinnamon sugar, lemon juice and 1 tablespoon butter. A little of the filling may leak as you heat the quesadilla, but the time savings will more than compensate.
