Creamy Chocolate Pudding

Ingredients
- 1/3 cup sugar
- 1/3 cup unsweetened cocoa powder
- 2 (1-ounce) squares semisweet chocolate, chopped
- 2 tablespoons cornstarch
- 1/8 teaspoon salt
- 1/8 teaspoon salt
- 2 1/4 cups milk
- 1 teaspoon vanilla extract
Directions
Combine sugar, cocoa, chocolate, cornstarch and salt in a large bowl and mix well.
Heat milk in a heavy saucepan over medium-high heat until tiny bubbles form around the edge, about 7 minutes; do not boil. Remove from heat.
Add milk gradually to cocoa mixture, whisking continually. Return to saucepan.
Cook over medium heat, stirring continually, until thickened and bubbly, about 5 minutes. Remove from heat. Stir in vanilla. Serve warm.
Secret Tip
The microwave is perfect for making Creamy Chocolate Pudding. Simply heat the milk in the microwave until steaming, pour into the dry ingredients in a large, microwave-safe bowl and mix well. Microwave, uncovered, on MEDIUM for 8 minutes, stirring every 2 minutes.
