Easy Peanut Brittle
This old favorite has a reputation for being tricky, but the microwave utterly simplifies it.

Ingredients
- 1 1/2 cups raw shelled Spanish peanuts with skins
- 1 cup sugar
- 1/2 cup light corn syrup
- 1/8 teaspoon salt
- 1 teaspoon butter
- 1 teaspoon butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Directions
Grease a baking sheet lightly. Combine peanuts, sugar, corn syrup and salt in a 11/2-quart microwave-safe bowl and mix well. Microwave on HIGH for 4 minutes; stir to mix well.
Microwave for 4 minutes. Stir in butter and vanilla extract.
Microwave on HIGH for 2 minutes. Add baking soda. Stir quickly until light and foamy.
Pour immediately onto prepared baking sheet, spreading thinly. Let stand to cool. Place on a wire rack. Break into small pieces. Store in an airtight container.
