Easy Peanut Brittle

Easy Peanut Brittle

This old favorite has a reputation for being tricky, but the microwave utterly simplifies it.

Ingredients

  • 1 1/2 cups raw shelled Spanish peanuts with skins
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon butter
  • 1 teaspoon butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Directions

  1. Grease a baking sheet lightly. Combine peanuts, sugar, corn syrup and salt in a 11/2-quart microwave-safe bowl and mix well. Microwave on HIGH for 4 minutes; stir to mix well.

  2. Microwave for 4 minutes. Stir in butter and vanilla extract.

  3. Microwave on HIGH for 2 minutes. Add baking soda. Stir quickly until light and foamy.

  4. Pour immediately onto prepared baking sheet, spreading thinly. Let stand to cool. Place on a wire rack. Break into small pieces. Store in an airtight container.
