Gingered Apricot Dessert

Gingered Apricot Dessert

You can whip up this creamy, sophisticated dessert from just four ingredients. Only you need to know how simple it is.

Ingredients

  • 2 (15-ounce) cans apricot halves in heavy syrup
  • 1 cup Neufchâtel cheese, softened
  • 2 tablespoons light brown sugar
  • 1/2 cup crushed gingersnap cookies

Directions

  1. Preheat oven to 400°F.

  2. Drain apricots, reserving 1/2 cup syrup. Arrange apricots cut sides up in a 13- x 9-inch baking dish. Pour half the reserved syrup over apricots.

  3. Combine Neufchâtel, brown sugar and remaining reserved syrup in a large bowl. Beat with an electric mixer until smooth, about 2 minutes.

  4. Spoon mixture into centers of apricots. Sprinkle with cookie crumbs. Bake just until heated through, about 10 minutes. Serve immediately.

Secret Tip

Neufchâtel cheese is a European variety that is naturally one-third lower in fat than cream cheese but behaves just like it. It is sold as "Neufchâtel" or sometimes as "reduced-fat cream cheese."
