Grilled Peach Melba
When Melba is in the name of a dessert, expect a sauce made with sweet raspberries.

Ingredients
- 1/2 pint fresh raspberries
- 1/4 cup granulated sugar
- 1/4 cup firmly packed light brown sugar
- 2 tablespoons unsalted butter, melted
- 4 large ripe peaches, peeled and sliced
- 4 large ripe peaches, peeled and sliced
- 1 (16-ounce) frozen pound cake, thawed and cut into 8 slices
- Vanilla ice cream
Directions
Preheat grill to medium. Toss raspberries with granulated sugar in a medium bowl. Let stand for 5 minutes.
Meanwhile, combine brown sugar and butter in a small bowl and mix well.
Place peaches on a piece of foil, folding up sides of foil to form a boat. Spoon butter mixture over peaches. Grill 6 inches from heat until tender, about 5 to 10 minutes.
Grill cake slices until toasted, about 2 minutes per side.
Place cake slices on each of 8 individual dessert plates. Spoon equal portions of peaches over each cake slice. Top each with a scoop of vanilla ice cream. Drizzle with raspberry mixture. Serve immediately.
Secret Tip
Choose freestone peaches to simplify slicing them, as freestone peach flesh doesn't cling to the pit. If you can't tell what kind of peach is on sale, don't worry; most peaches these days are freestone.
