Pears in Chocolate Sauce
Pears get the royal treatment with a sophisticated homemade chocolate sauce spiked with orange and wine.

Ingredients
- 2 (15 1/4-ounce) cans pear halves, drained
- 1/2 cup white wine
- 1/2 cup orange juice
- 1/2 cup water
- 6 (1-ounce) squares bittersweet chocolate
- 6 (1-ounce) squares bittersweet chocolate
- 3/4 cup firmly packed light brown sugar
- 4 to 6 mint sprigs, optional for garnish
Directions
Combine pears, wine, orange juice and water in a large bowl and mix gently. Set aside.
Chop chocolate coarsely.
Drain pears, reserving 1/2 cup liquid. Place reserved liquid in a small saucepan. Bring to a boil over medium heat, stirring continually. Reduce heat to medium-low.
Add brown sugar to mixture. Cook, stirring continually, for 3 minutes. Remove from heat. Add chocolate and stir until melted.
Spoon equal portions of chocolate sauce onto each of 4 to 6 dessert plates. Place 2 pear halves on each plate. Garnish with mint, if desired. Serve immediately.
Secret Tip
Small bits of chocolate melt much more quickly than big chunks. The simplest way to quickly reduce squares of chocolate to small bits is to grate the squares with a grater or use the grater attachment of a food processor.
