Spring Fruit Salad

Italians can hardly wait for spring, when they pair the first berries with a few precious drops of the finest, sweetest balsamic vinegar for a once-a-year treat.

Ingredients

  • 5 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1/8 teaspoon white pepper
  • 1 pint strawberries, cut in half
  • 1 cup blueberries
  • 1 large firm banana, sliced

Directions

  1. Whisk honey and vinegar in a large bowl until blended. Stir in white pepper.

  2. Add strawberries and blueberries to honey mixture and stir gently to coat.

  3. Let mixture stand at room temperature for 5 to 10 minutes. Stir in banana. Spoon into dessert cups and serve.

Secret Tip

The higher the quality of the balsamic vinegar, the sweeter and milder it is. The finest aged vinegars are so mellow that they are not mixed with oil but simply dribbled over salads, vegetables and fish. Look for it at the supermarket and buy the best quality you can afford-a higher price really does buy a much better vinegar.
