Warm Brownie Pudding

Warm Brownie Pudding

Follow the directions exactly, and this batter will bake into a rich brownie with a layer of pudding underneath.

Ingredients

  • 1 (19.8-ounce) package fudge brownie mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1/4 cup water
  • 1 1/2 cups firmly packed light brown sugar
  • 1 1/2 cups firmly packed light brown sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 1/3 cups boiling water

Directions

  1. Preheat oven to 350°F. Grease two 9-inch square baking dishes.

  2. Combine the brownie mix, vegetable oil, eggs and water in a medium bowl and mix well. Divide batter evenly between the prepared baking dishes.

  3. Combine the brown sugar and cocoa in a small bowl and mix well. Sprinkle half the brown sugar mixture evenly on top of batter in each baking dish.

  4. Pour half the boiling water on top of brown sugar mixture in each baking dish.

  5. Bake until pudding is set, about 23 minutes. Serve with ice cream, whipped cream or milk, if desired.

Secret Tip

This brownie pudding keeps very well for up to a day in the refrigerator, so you can bake it in advance. If you wish, reheat, covered with plastic wrap, on LOW in the microwave. But there's no need to reheat; this pudding is also delicious cold.
