Beef Taco Pie
Piecrust makes a convenient shell for holding all those great-tasting taco ingredients-ground beef, beans, salsa and cheese.

Ingredients
- 1 refrigerated pie pastry
- 1 pound lean ground beef
- 1 (15-ounce) can spicy chili beans
- 1/2 cup chunky salsa
- 1 1/2 cups shredded Mexican blend cheese, divided
- 1 cup shredded lettuce
- 1/2 cup chopped fresh tomato
- 1/4 cup chopped red onion
- 1 (2 1/4-ounce) can sliced black olives, drained
- 2 tablespoons chopped fresh cilantro
Directions
Preheat oven to 425°F.
Fit 1 pie pastry over the bottom and up the side of a 9-inch pie plate. Flute edge and prick pastry all over with a fork. Bake until lightly browned, about 9 to 11 minutes.
Cook ground beef in a large skillet over medium-high heat, stirring frequently, until browned and crumbly, about 8 minutes; drain.
Add beans and salsa to ground beef and mix well. Stir in 1 cup cheese. Cook over low heat, stirring frequently, until cheese is melted, about 2 to 3 minutes.
Spoon ground beef mixture into baked piecrust. Layer with remaining cheese, lettuce, tomato and onion. Sprinkle with olives and cilantro. Serve immediately.
Secret Tip
To make sure the taco filling is firm enough to slice, drain the beans very well. If the salsa seems watery, pour it through a sieve and discard any excess liquid.
