Gingered Pork Medallions
Pork is the meat of choice for quick cooking and all-around versatility. Here, it gets a quick treatment of spicy ginger, fragrant garlic and mellow soy sauce.

Ingredients
- 1 tablespoon refrigerated minced garlic
- 1 tablespoon grated gingerroot
- 2 teaspoons olive oil
- 1/2 teaspoon salt
- 8 pork tenderloin medallions
- 1/2 cup water
- 2 tablespoons apple jelly
- 1 tablespoon soy sauce
Directions
Combine garlic, gingerroot, olive oil and salt in a large bowl and mix well. Coat pork with garlic mixture.
Heat a nonstick skillet over medium-high heat. Cook pork in hot skillet until cooked through, about 3 minutes per side. Transfer to a plate and keep warm.
Add water, jelly and soy sauce to skillet drippings. Cook, stirring continually, for 3 minutes. Pour over pork. Serve immediately.
Secret Tip
To avoid burning the garlic coating, which would give the dish an "off" flavor, keep the heat at medium-low to medium. The pork will also remain juicier when cooked at a slightly lower temperature. You may need to increase the cooking time by up to 1 minute per side.
