Gingered Pork Medallions

Gingered Pork Medallions

Pork is the meat of choice for quick cooking and all-around versatility. Here, it gets a quick treatment of spicy ginger, fragrant garlic and mellow soy sauce.

Ingredients

  • 1 tablespoon refrigerated minced garlic
  • 1 tablespoon grated gingerroot
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 8 pork tenderloin medallions
  • 1/2 cup water
  • 2 tablespoons apple jelly
  • 1 tablespoon soy sauce

Directions

  1. Combine garlic, gingerroot, olive oil and salt in a large bowl and mix well. Coat pork with garlic mixture.

  2. Heat a nonstick skillet over medium-high heat. Cook pork in hot skillet until cooked through, about 3 minutes per side. Transfer to a plate and keep warm.

  3. Add water, jelly and soy sauce to skillet drippings. Cook, stirring continually, for 3 minutes. Pour over pork. Serve immediately.

Secret Tip

To avoid burning the garlic coating, which would give the dish an "off" flavor, keep the heat at medium-low to ­medium. The pork will also remain juicier when cooked at a slightly lower temperature. You may need to increase the ­cooking time by up to 1 minute per side.
