Pork & Pineapple Burritos
With protein, fruit and starch all in one tidy roll, Pork and Pineapple Burritos are great when you only have time to cook one dish.

Ingredients
- 1 pound pork tenderloin, chopped
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 1 teaspoon vegetable oil
- 1 cup undrained canned pineapple tidbits
- 8 (7-inch) flour tortillas
- 1 cup chopped onion
- 1 cup salsa
Directions
Combine pork, chili powder and salt in a large bowl and toss to coat the pork.
Heat vegetable oil in a large nonstick skillet over medium-high heat. Add seasoned pork. Sauté until the pork is browned, about 4 minutes. Transfer to a plate.
Add the pineapple to skillet. Bring to a boil. Cook until slightly thickened, about 3 minutes. Stir in pork mixture. Cook until pork is cooked through, about 1 minute.
Warm tortillas using package directions. Spoon 2/3 cup of the pork mixture down the center of each tortilla. Spoon 2 tablespoons of the onion and 2 tablespoons of the salsa over the pork mixture. Roll to enclose the filling.
Secret Tip
To save on preparation time, ask the supermarket's butcher for pork cubes.
