Ribs with Corn Relish

Give store-bought ribs a homemade taste by heating on the grill and serving with a wholesome relish that’s full of contrasting tastes and textures.

Ingredients

  • 2 cups salsa
  • 1 cup frozen whole kernel corn, thawed
  • 1 cup drained canned black-eyed peas
  • 1/2 cup frozen chopped green bell pepper, thawed
  • 1/4 cup chopped red onion, optional
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped jalapeño
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 pounds grilled baby-back pork ribs with barbecue sauce

Directions

  1. Preheat grill to medium-high.

  2. Combine salsa, corn, black-eyed peas, bell pepper, onion, cilantro, jalapeño, salt and black pepper in a medium bowl and mix well.

  3. Grill ribs until heated through, about 10 minutes. Cut into serving portions. Serve with salsa.

Secret Tip

If you haven't discovered kitchen shears, do yourself the favor of getting a pair. Use them to snip the cilantro directly into the bowl for this recipe. They wipe clean with a damp cloth, and there's no cutting board to wash.
