Breakfast Pizza
Made with ham and herbs, this upscale version of green eggs and ham makes a luxurious breakfast.

Ingredients
- 1 (8 1/2-inch) focaccia
- 8 medium eggs
- 1/4 cup sour cream
- 1 teaspoon dried parsley
- 1/2 teaspoon dried dill
- 1/2 teaspoon dried chives
- 1/4 teaspoon salt
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 4 ounces thinly sliced cooked ham or smoked salmon, cut into strips
- 1 tablespoon chopped green onions
Directions
Preheat oven to 350°F.
Place focaccia on a baking sheet. Bake until warm, about 10 minutes.
Whisk eggs, sour cream, parsley, dill, chives, salt and black pepper in a medium bowl until mixed.
Heat butter in a large nonstick skillet over medium heat. Cook egg mixture in hot butter, stirring occasionally, until soft curds form, about 4 to 5 minutes; do not overcook.
Spoon egg mixture evenly over warm focaccia. Top with ham. Sprinkle with green onions. Cut into wedges and serve immediately.
Secret Tip
Use a whisk to stir the eggs slowly but constantly while they cook. This will result in a very fine, almost whipped texture that makes them simple to distribute evenly over the focaccia, with no large bits that make eating more difficult.
