Breakfast Pizza

Made with ham and herbs, this upscale version of green eggs and ham makes a luxurious breakfast.

Ingredients

  • 1 (8 1/2-inch) focaccia
  • 8 medium eggs
  • 1/4 cup sour cream
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried chives
  • 1/4 teaspoon salt
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 4 ounces thinly sliced cooked ham or smoked salmon, cut into strips
  • 1 tablespoon chopped green onions

Directions

  1. Preheat oven to 350°F.

  2. Place focaccia on a baking sheet. Bake until warm, about 10 minutes.

  3. Whisk eggs, sour cream, parsley, dill, chives, salt and black pepper in a medium bowl until mixed.

  4. Heat butter in a large nonstick skillet over medium heat. Cook egg mixture in hot butter, stirring occasionally, until soft curds form, about 4 to 5 minutes; do not overcook.

  5. Spoon egg mixture evenly over warm focaccia. Top with ham. Sprinkle with green onions. Cut into wedges and serve immediately.

Secret Tip

Use a whisk to stir the eggs slowly but constantly while they cook. This will result in a very fine, almost whipped texture that makes them simple to distribute evenly over the focaccia, with no large bits that make eating more ­difficult.
