Bulgur Pilaf with Walnuts

Bulgur Pilaf with Walnuts

Delicious and easy to prepare, bulgur pilaf is a whole-grain alternative to rice.

Ingredients

  • 2 cups chicken broth
  • 1 cup bulgur
  • 1/2 cup sliced green onions
  • 1/2 cup grated carrot
  • 1/4 cup frozen chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/2 cup chopped walnuts

Directions

  1. Bring chicken broth to a boil in a medium saucepan over medium-high heat. Stir in bulgur; cover. Reduce heat to medium-low. Cook, stirring occasionally, for 10 minutes.

  2. Stir in green onions, carrot, chopped onion, salt and garlic powder.

  3. Cook, covered, until bulgur is tender and liquid is absorbed, about 8 minutes. Spoon into a serving dish. Sprinkle with walnuts.

Secret Tip

If bulgur is priced as an exotic ingredient where you shop or is not available, use orzo, a rice-shaped pasta, instead. Follow the recipe directions, but reduce the cooking time in step 1 to 7 minutes. Add onions, carrot, salt and garlic powder. Cook for 5 minutes longer.
