Ingredients

  • 2 (16-ounce) cans chickpeas, drained
  • 2 medium tomatoes, chopped
  • 1 medium red onion, chopped
  • 2 tablespoons chopped fresh rosemary
  • 1/4 cup extra virgin olive oil
  • 1 large garlic clove, sliced
  • 1 large garlic clove, sliced
  • Juice of 1 lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Combine chickpeas, tomatoes and onion in a large bowl and mix well. Add rosemary and mix well.

  2. Combine olive oil, garlic and lemon juice in a small bowl and mix well.

  3. Pour olive oil mixture over chickpea mixture and toss to coat.

  4. Season with salt and pepper and serve.

Secret Tip

With a recipe this simple, you want to use only the freshest, best ingredients. Buy fresh rosemary and the best olive oil you can afford. You aren't using much oil, so buy a small bottle. Be sure to look at the date-olive oil loses its fresh flavor in about a year.
