Chickpea & Tomato Toss

Ingredients
- 2 (16-ounce) cans chickpeas, drained
- 2 medium tomatoes, chopped
- 1 medium red onion, chopped
- 2 tablespoons chopped fresh rosemary
- 1/4 cup extra virgin olive oil
- 1 large garlic clove, sliced

- Juice of 1 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions
Combine chickpeas, tomatoes and onion in a large bowl and mix well. Add rosemary and mix well.
Combine olive oil, garlic and lemon juice in a small bowl and mix well.
Pour olive oil mixture over chickpea mixture and toss to coat.
Season with salt and pepper and serve.

With a recipe this simple, you want to use only the freshest, best ingredients. Buy fresh rosemary and the best olive oil you can afford. You aren't using much oil, so buy a small bottle. Be sure to look at the date-olive oil loses its fresh flavor in about a year.
