Creamed Onions
Tender little onions with a touch of beef flavor make a hearty winter side dish.

Ingredients
- 18 pearl onions
- 4 tablespoons butter, divided
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 2 cups milk
- 2 cups milk
- 1 (2 1/4-ounce) jar dried beef, shredded
- 1/2 cup bread crumbs
Directions
Preheat oven to 400°F. Combine onions and enough salted water to cover in a large saucepan.
Bring to a boil. Boil for 7 minutes; drain. Cool slightly. Remove and discard onion peels. Melt 2 tablespoons butter in a large ovenproof skillet over medium-high heat. Add flour and salt. Cook mixture, stirring continually, for 2 minutes. Add the milk.
Cook, stirring continually, until thickened, about 4 minutes. Add onions and dried beef to mixture and mix well.
Melt 2 tablespoons butter in a small saucepan over low heat. Stir in bread crumbs. Sprinkle over onion mixture. Bake for 15 minutes.

Serve these creamy onions with baked or roasted meat. They're delicious with beef pot roast or pork loin roast. Use them to add a homemade touch to purchased roast turkey or chicken.
