Honey-Glazed Carrots

Honey-Glazed Carrots

A pinch of ginger and a squeeze of fresh lemon liven up traditional glazed carrots.

Ingredients

  • 16 ounces baby carrots
  • 4 tablespoons ( 1/2 stick) butter
  • 2 1/2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon juice
  • 1/16 teaspoon ground ginger

Directions

  1. Combine carrots and enough water to cover in a large saucepan. Cook over medium-high heat until tender, about 5 minutes; drain well.

  2. Combine butter and honey in a large skillet. Cook over low heat, stirring continually, until well blended.

  3. Add lemon juice and ginger to butter mixture and mix well.

  4. Add the carrots to the skillet and stir to glaze. Cook, stirring occasionally, until heated through. Serve immediately.

Secret Tip

To free up a burner on the stove, use the microwave to cook the carrots. Cover carrots with water in a microwave-safe dish, preferably with a lid. Cover and microwave on HIGH for 5 minutes. Let stand for 2 minutes, then drain and proceed as directed.
