Maple Acorn Squash

Maple Acorn Squash

Walnuts and onion offset the natural sweetness of squash and ?maple syrup in this vitamin-rich side dish.

Ingredients

  • 2 acorn squash
  • 1/2 cup maple syrup
  • 1/3 cup finely chopped onion
  • 1/4 cup chopped walnuts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Directions

  1. Preheat oven to 450°F.

  2. Cut each squash crosswise into three 3/4-inch slices. Place squash in enough boiling water to cover in a large saucepan. Boil for 5 minutes; drain well. Arrange in a 13- x 9-inch baking dish.

  3. Meanwhile, combine maple syrup, onion, walnuts, olive oil, salt, pepper and nutmeg in a small bowl; mix well.

  4. Spoon maple syrup mixture evenly over squash. Bake until squash is tender, about 10 to 15 minutes.

Secret Tip

If you prefer to peel the acorn squash, try microwaving it for 3 to 4 minutes before peeling. The knife will slip right in. And since the squash is partially cooked, it will finish cooking more quickly in steps 2 and 4.
