Savory Spinach Bake

This is the easiest kind of side dish-just mix the ingredients in a bowl, spoon into a baking dish and bake.

Ingredients

  • 2 (10-ounce) packages frozen chopped spinach, thawed and drained
  • 3 1/2 cups herb stuffing mix
  • 1/2 large onion, chopped
  • 3/4 cup (11/2 sticks) butter, melted
  • 1/2 cup grated Parmesan cheese
  • 4 large eggs, beaten
  • 4 large eggs, beaten
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon dried thyme

Directions

  1. Preheat oven to 350°F.

  2. Combine spinach, stuffing mix, onion, butter, Parmesan, eggs, black pepper, garlic salt and thyme in a large bowl and mix well.

  3. Spoon spinach mixture into a 2-quart baking dish.

  4. Bake until the eggs have set and the mixture is hot, about 17 minutes.

Secret Tip

Frozen spinach can be watery enough to affect the texture of the finished dish. For the best results, squeeze most of the water out of the spinach before combining with the other ingredients.
