Zucchini Strata
Microwaving is not only a great cooking process to speed up meal preparation, it also preserves some of the nutrients in vegetables that are lost in boiling.

Ingredients
- 6 medium zucchini, coarsely chopped
- 3/4 cup frozen chopped onion
- 1 (10-ounce) can cream of chicken soup
- 1/2 cup sour cream
- 1 cup seasoned bread crumbs
- 2 tablespoons butter, melted
Directions
Combine zucchini and onion in a large microwave-safe dish. Microwave, loosely covered, on HIGH (100% power) until zucchini are tender, about 7 minutes.
Combine soup and sour cream in a small bowl and mix well. Stir into zucchini mixture.
Combine bread crumbs and butter in a medium bowl and mix well.
Layer zucchini mixture and bread crumb mixture one-half at a time in a 2-quart microwave-safe dish.
Microwave on HIGH until hot and bubbly, about 12 minutes. Let stand until set, about 5 minutes.
Secret Tip
The standing time allows the strata to set so that it is neater to serve. You could let it stand as long as 15 minutes for a much firmer, almost sliceable consistency.
