Cheesy Barbecue Potatoes
The combination of microwaving and baking-microbaking- gives potatoes the best of the microwave’s speed and the fluffiness and crisp exterior of oven baking.

Ingredients
- 2 large baking potatoes, scrubbed
- Vegetable oil
- 1/3 cup barbecue sauce
- Salt and black pepper
- 3/4 cup shredded Colby cheese
- 3/4 cup shredded Colby cheese
- 1/3 cup sliced green onions
- 6 tablespoons real bacon bits
Directions
Preheat oven to 450°F.
Cut potatoes into 1/4-inch slices. Brush with vegetable oil.
Arrange potatoes in slightly overlapping rows in a microwave- safe 13- x 9-inch baking dish. Cover with plastic wrap, venting one corner.
Microwave at 90% for 8 minutes. Remove plastic wrap. Bake for 10 minutes.
Brush potatoes with barbecue sauce. Sprinkle with salt and black pepper to taste, then top with Colby, green onions and bacon bits. Bake until cheese is melted, about 3 to 5 minutes.
