Garlic & Herb Potatoes

Garlic & Herb Potatoes

Intensely fragrant sauce coats these new potatoes for a sensational combination of delicate and bold flavors and satiny but firm textures.

Ingredients

  • 2 1/2 pounds new red potatoes, scrubbed
  • 1 teaspoon salt
  • 1 (5.2-ounce) package garlic and herb cheese spread
  • 3/4 cup buttermilk
  • 3/4 cup buttermilk
  • 1/4 cup chopped fresh chives

Directions

  1. Cut potatoes into quarters.

  2. Combine potatoes, salt and enough water to cover in a saucepan. Bring to a boil.

  3. Reduce heat to medium. Cook, covered, until potatoes are tender, about 15 to 20 minutes; drain. Place in a serving dish.

  4. Meanwhile, combine cheese spread and buttermilk in a saucepan. Cook over medium heat, stirring constantly, until cheese is melted. Remove from heat.

  5. Add 2 tablespoons chives to cheese mixture and mix well. Pour over potatoes and toss to coat. Sprinkle with remaining chives.

Secret Tip

If the only new ­potatoes you can find are the size of a fist or larger, cut them so they will cook in the allotted time. A fist-size potato cut into eighths will cook in about 7 minutes.
