Herbed Garlic Potatoes
Micro-baking the potatoes combines the speed of the microwave oven and the browning action of a traditional oven.

Ingredients
- 1 3/4 pounds new red potatoes, scrubbed
- 1/3 cup butter, melted
- 2 tablespoons minced garlic
- 2 teaspoons dried parsley
- 1 teaspoon seasoned salt
- 1 teaspoon paprika
Directions
Preheat oven to 425°F.
Cut each potato into quarters. Place in a microwave-safe 9-inch square baking dish.
Combine butter, garlic, parsley, seasoned salt and paprika in a small bowl and mix well. Pour evenly over potatoes.
Microwave on HIGH, stirring occasionally, until potatoes are tender, about 10 minutes. Bake until golden, about 6 minutes.
Secret Tip
If red potatoes aren't in season, or if you can't find them at your supermarket, try using small white potatoes, sometimes labeled "boiling potatoes." Cut them into bite-size pieces.
