Herbed Lemon Potato Salad
Lemon juice and onion are a frequent seasoning for potatoes in warmer climates. Try them in this combination for a potato salad that’s different yet familiar.

Ingredients
- 1 1/2 pounds small red potatoes, scrubbed and quartered
- 1/3 cup olive oil
- 1 1/2 tablespoons lemon juice
- 1 1/2 teaspoons grated lemon zest
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 3/4 cup chopped onion
- 3/4 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh basil
Directions
Combine potatoes and enough water to cover in a large saucepan over medium-high heat. Bring to a boil. Cook until tender, about 10 minutes; drain well. Rinse with cold water.
Combine olive oil, lemon juice, lemon zest, salt and black pepper in a small bowl and mix well.
Combine potatoes, onion, bell pepper, cilantro, mint and basil in a large bowl and mix well.
Add olive oil mixture to potato mixture and toss gently to mix. Let stand for 2 minutes and serve.
Secret Tip
Tame the flavor of raw onions to bring out their mellow best for this potato salad- or any recipe that calls for raw onion. Chop the onion, then soak in ice- cold water for 15 minutes. Drain and pat dry. You'll find the onions milder but still full of flavor.
