Herbed Potato Dumplings
Warm, comforting, old-world dumplings in just minutes are delicious as a meatless meal or served as a side dish with a meat entree.

Ingredients
- 1 cup boiling water
- 1 (4-ounce) package butter and herb instant mashed potatoes
- 1 teaspoon dried parsley
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup all-purpose flour
Directions
Combine water, instant potatoes, parsley and salt in a large bowl. Beat with an electric mixer for 2 minutes. Beat in eggs. Add flour and mix well.
Pat dough 3/4 inch thick on a floured surface using floured hands. Cut with a round 11/4-inch-wide pastry cutter.
Bring enough water to cover dumplings to a
boil in a large saucepan. Cook dumplings in batches in boiling water until cooked through, about 6 minutes. Transfer to paper towels to drain. Serve immediately.
Secret Tip
These dumplings are similar to the Italian dish called "gnocchi," a potato dumpling with a firm texture. Try serving them with marinara sauce or with butter and crisp, chunky bread crumbs. For a luxurious Continental entree, toss the dumplings with butter, blue cheese and toasted hazelnuts.
