Honey Mustard Potatoes

Honey Mustard Potatoes

This potato dish is like a warm potato salad. The honey mustard dressing is a quick way to give the potatoes plenty of flavor without a lot of work.

Ingredients

  • 8 potatoes, scrubbed and cut into 1/4-inch slices
  • 1/2 cup honey mustard salad dressing
  • 2 tablespoons mayonnaise
  • 2 green onions, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon paprika

Directions

  1. Combine potatoes with enough water to cover in a large saucepan. Bring to a boil over medium-high heat. Cook until tender, about 12 minutes; drain.

  2. Combine potatoes, salad dressing, mayonnaise, green onions, salt and pepper in a large bowl and mix well.

  3. Spoon into a serving dish. Sprinkle with paprika. Serve immediately.

Secret Tip

If you make this potato dish well ahead of ­serving time, you'll likely notice that the potatoes seem dry. This happens because warm potatoes absorb the dressing. Plan on adding more dressing just before serving for the proper texture.
