Potato Cheese Casserole
Eggs and cheese turn the kids’ favorite potatoes into a full meal that’s likely to be just as popular with grown-ups.

Ingredients
- 2 teaspoons butter, divided
- 2 large eggs
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon black pepper
- 1 (2-pound) package frozen potato gems, thawed
- 3 cups shredded Cheddar cheese, divided
Directions
Preheat oven to 350°F. Grease a 9- x 9-inch baking dish with 1 teaspoon butter.
Beat eggs in a large bowl. Add milk and mix well. Stir in salt and black pepper.
Add potato gems and 2 cups Cheddar to egg mixture and mix well. Spoon into prepared baking dish.
Sprinkle with remaining Cheddar. Dot with remaining butter. Bake until golden, about 22 to 24 minutes.
Secret Tip
You can speed up the cooking by starting this dish in the microwave. Cook, covered, on LOW (50% power) for 10 minutes, stirring occasionally as the mixture begins to set around the edges. Then bake for about 10 to 12 minutes.
