Potato Vegetable Mash

Potato Vegetable Mash

Even picky eaters are guaranteed to eat vegetables that are surrounded by creamy mashed potatoes seasoned with rich onion flavor.

Ingredients

  • 4 medium potatoes, scrubbed and chopped
  • 3 cups chopped carrots
  • 1 cup chopped broccoli
  • 8 ounces French onion dip
  • 1/2 teaspoon salt
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon paprika

Directions

  1. Combine potatoes, carrots and enough water to cover in a large saucepan over high heat. Bring to a boil. Cook for 12 minutes.

  2. Add broccoli to the potato mixture. Cook for 3 minutes; drain well.

  3. Combine vegetables, dip, salt and black pepper in a large bowl. Beat with an electric mixer until creamy.

  4. Transfer to a serving dish. Sprinkle with paprika. Serve immediately.

Secret Tip

Rather than purchase a head of broccoli for Potato Vegetable Mash, use one 10-ounce package of frozen chopped broccoli. Micro­wave it as directed, then drain and add to the potato mixture along with the dip. You'll eliminate all the chopping time.
