Potato Vegetable Mash
Even picky eaters are guaranteed to eat vegetables that are surrounded by creamy mashed potatoes seasoned with rich onion flavor.

Ingredients
- 4 medium potatoes, scrubbed and chopped
- 3 cups chopped carrots
- 1 cup chopped broccoli
- 8 ounces French onion dip
- 1/2 teaspoon salt
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon paprika
Directions
Combine potatoes, carrots and enough water to cover in a large saucepan over high heat. Bring to a boil. Cook for 12 minutes.
Add broccoli to the potato mixture. Cook for 3 minutes; drain well.
Combine vegetables, dip, salt and black pepper in a large bowl. Beat with an electric mixer until creamy.
Transfer to a serving dish. Sprinkle with paprika. Serve immediately.
Secret Tip
Rather than purchase a head of broccoli for Potato Vegetable Mash, use one 10-ounce package of frozen chopped broccoli. Microwave it as directed, then drain and add to the potato mixture along with the dip. You'll eliminate all the chopping time.
