Sweet Potato Fritters

A tidy, easy-to-eat shape adds yet another good reason to enjoy the great taste and superior nutrition of sweet potatoes.

Ingredients

  • 4 small sweet potatoes
  • 1/2 cup bread crumbs, divided
  • 1 egg yolk, lightly beaten
  • 1 tablespoon sugar
  • 1/8 teaspoon salt
  • 1/8 teaspoon salt
  • 1 egg white, stiffly beaten
  • Canola oil for pan-frying

Directions

  1. Prick sweet potatoes all over with a fork. Microwave on HIGH until tender, about 10 to 12 minutes. Cool slightly and peel.

  2. Mash sweet potato pulp in a large bowl. Add 1/4 cup bread crumbs, egg yolk, sugar and salt and mix well. Fold in egg white.

  3. Shape sweet potato mixture into 6 patties. Coat with remaining bread crumbs.

  4. Fry patties in canola oil in a large skillet, turning once, until browned, about 3 minutes per side.

Secret Tip

You can get a head start on dinner by microwaving the sweet potatoes any time up to two days in advance. Refrigerate them in their skins, then peel and mash when you're ready to make the patties.
