Uptown Hash Browns
In the language of American diners, an order of hash brown potatoes was called clean up the kitchen for the additions typically made to the dish. This version is more refined and attractive.

Ingredients
- 1 tablespoon butter
- 1 tablespoon vegetable oil
- 1 cup frozen chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1 teaspoon refrigerated minced garlic
- 1 teaspoon refrigerated minced garlic
- 16 ounces frozen shredded hash brown potatoes, thawed
- 1/2 teaspoon each salt and black pepper
- 2 ounces pepper Jack cheese, shredded
Directions
Heat butter and vegetable oil in a large skillet over medium heat. Sauté onion in hot butter mixture, stirring continually, for 3 minutes.
Add bell peppers and garlic to onion mixture. Sauté, stirring continually, for 3 minutes.
Add potatoes, salt and black pepper to onion mixture. Cook, stirring occasionally, until potatoes are golden, about 14 minutes.
Sprinkle with pepper Jack. Cook until cheese is melted, about 2 minutes. Serve immediately.
Secret Tip
Turn this dish into a complete meal by beating 6 eggs and pouring them over the hash brown potatoes after step 3. Cook over low heat until the eggs are set. Flip to cook the other side, or broil until the top is set, topping with cheese for the last minute or so of cooking. Cut into wedges.
