Western Potato Patties

For centuries, good cooks have relied on potato patties as a filling meatless main dish or a side dish with style and flavor.

Ingredients

  • 6 medium potatoes, scrubbed
  • 1 1/2 tablespoons chopped red bell pepper
  • 1 1/2 tablespoons chopped green bell pepper
  • 1 1/2 tablespoons chopped fresh chives
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 1/4 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup canola oil
  • 4 tablespoons butter

Directions

  1. Pierce each potato all over with a fork. Microwave on HIGH, turning every 5 minutes, until tender, about 15 minutes. Rinse with cold water. Peel potatoes and chop finely.

  2. Combine potatoes, bell peppers, chives, salt and black pepper in a large bowl and mix gently. Add milk, egg and Worcestershire sauce and mix gently. Shape into patties.

  3. Heat canola oil and butter in a large skillet over medium-high heat. Cook patties in hot oil mixture until browned, about 4 minutes per side. Serve immediately.

Secret Tip

Speed up the process by using frozen mashed potatoes, prepared according to the package directions. You may need to use less milk or add a small amount of flour to the potato mixture to help the patties hold their shape.
